No-Bake Cocoa Cranberry Energy Bites

 Holiday baking is underway! While I have fond memories of baking Christmas cookies with my family, I don't crave those as much anymore because they're SO sweet (sugar cookies with loads of frosting...). These energy bites are lower in sugar and filled with good-for-you ingredients like fresh cranberries and cocoa. Have these for breakfast, dessert or a snack and enjoy the flavors of the holiday season with a little less guilt.

 1. Place cranberries in a food processor and pulse until finely ground. 


2. Add almonds and coconut oil and process for 30 seconds. 


3. Add cocoa powder, oats, vanilla and honey and process until mixture forms a soft dough. (Add 2-3 tablespoons water if needed.)


4. Transfer mixture to a bowl and refrigerate for 1 hour. 

5. Roll mixture into balls (about 2 tablespoons each) and roll in the coconut. Store in the fridge until ready to serve.

Makes 15

All you need:
1 cup fresh cranberries, frozen

1 cup honey roasted almonds
2 tablespoons coconut oil, melted
1/2 cup cocoa powder
1 cup oats
1 teaspoon vanilla extract
1/3 cup honey
Flaked coconut, for rolling

All you do:
